Spicy Calabrese Ragù Pasta with Roasted Peppers & Fennel

A bold and flavorful dish that brings the heat of Southern Italy to your table! This Ragù Alla Calabrese Pasta is rich, spicy, and packed with roasted peppers, fennel, and a touch of chilli. Perfect for a cozy dinner.

Ingredients (Serves 2-3):

  • 1 can Potts' Ragù Alla Calabrese
  • 250g pasta (such as rigatoni, penne, or tagliatelle)
  • 1 tbsp olive oil
  • 1 small red onion, finely sliced
  • 1 garlic clove, minced
  • ½ tsp chilli flakes (optional, for extra heat)
  • 200g mushrooms or plant-based mince (for a heartier dish)
  • Handful of fresh basil or parsley, chopped
  • Grated Parmesan or vegan alternative, to serve
  • Salt & black pepper, to taste

Instructions:

  1. Cook the pasta in salted boiling water according to the packet instructions. Drain and set aside, reserving ½ cup of pasta water.
  2. Meanwhile, heat olive oil in a large pan over medium heat. Add the red onion and garlic, sautéing until softened.
  3. Stir in the mushrooms or plant-based mince, cooking for a few minutes until golden.
  4. Pour in Potts' Ragù Alla Calabrese and let it simmer for 5-7 minutes, stirring occasionally. If the sauce is too thick, add a splash of the reserved pasta water.
  5. Toss the cooked pasta into the sauce, mixing well to coat. Season with salt, black pepper, and optional chilli flakes.
  6. Serve hot, garnished with fresh basil/parsley and a sprinkle of grated Parmesan or vegan cheese.
